Workshop Details
At the indicated time, we'll meet at the Piazza Garibaldi in Pisa to embark on a unique journey into the world of Tuscan cheese-making tradition. A few steps away from the square, there is a place where the culinary secrets will be revealed through a mozzarella workshop. Let's get to work!
As soon as we arrive, we'll start to learn about the curious origins of mozzarella. Did you know that its name comes from the verb "mozzare", which means to cut, and that it dates back to the 6th century?
We'll see each stage of the production process, from the curdling of the milk to the laborious stretching and kneading that results in the elastic texture of this cheese. You'll be able to mould your own mozzarella under the supervision of the experts, learning the secrets to achieve the perfect consistency.
At the end of this process, you'll be able to take away your creation as an exquisite souvenir of this gastronomic experience. But the activity doesn't end here, because afterwards, we'll have a tasting of local cheeses and products.
We'll taste cured pecorino and fresh ricotta, accompanied by rustic bread and regional jams—a real treat for the palate! In the meantime, we'll tell you how the locals appreciate and keep the culinary tradition of dairy products in Tuscany alive.
Finally, we'll conclude the experience after a total of 1.5 hours.
